
Over the past few weeks, I have been making the crap out of this quick pasta salad. It has 7 ingredients. I can regularly get 2-4 of them from my yard. Cool, right? So easy, and so good. Here it is. You’re welcome.
Lemon Basil Pasta Salad
Your pasta of choice
5 or 6 oz of Lemon Olive Oil
1 cup fresh basil leaves, chopped
1 cup fresh cilantro, chopped
(If you are a crazy person who doesn’t like cilantro, don’t stop reading.
Just forget the cilantro, and do 2 cups of basil instead. Also, I’m sad for you.)
2 cups of tomatoes, sliced small
8 oz feta cheese crumbles
Juice from 1/2 lemon
Cook the pasta. Rinse it under cold water to cool it down. Add all of the remaining ingredients.
Mix it all together. Chill for about 30 minutes.
Done.


Why do so may people dislike cilantro? Not only is it crazy, it tastes kind of like so many other greens that I don’t understand the specific aversion to cilantro. It takes all kinds, I suppose.
I like the recipe because it looks like something I could make (even without a garden!) Where do you get your lemon olive oil? Do you make it? (Please say you buy it.)

This looks really good. I always crave lemon in the summer. This would be a great side with a panini.
