The Forbidden Fruit of Barbados
Get your head out of the adult video section, por favor. Because the forbidden fruit of Barbados is actually grapefruit. Something I've really been craving lately. And in the process, I found this super simple recipe at the Domino site (a place you might consider visiting regularly). I tried it, and it is really, really good. I love when food isn't fussy. The recipe is really so simple and the flavors are so good, it hasn't exactly cured my grapefruit craving. Because now I'm constantly craving this salad.Arugula and Grapefruit Salad
* 3 pink grapefruit
* 4 tbsp. extra-virgin olive oil
* 1 tbsp. champagne vinegar
* salt and pepper
* 3 large handfuls arugula, rinsed
* 2 ripe avocados, cut into chunks
* 1⁄2 red onion, thinly sliced

Slice off the tops and bottoms of the grapefruit, then cut off the skin. Section fruit and remove membranes, working over a bowl to catch the juice. To bowl add oil, vinegar, salt and pepper to taste; whisk to combine. Toss the arugula with half of the dressing. Arrange arugula on plates, then top with grapefruit sections, avocado and red onion. Spoon on the remaining dressing and serve.

Neither SwingDaddy nor I like to eat grapefruit, but somehow Q has decided that it's yummy, so the adults in the family are going to have to follow his example!

that looks wonderful. i doubt the kids would eat it, arugula is a bit spicy, but that would be an excellent lunch for MrX and myself one day. if we can ever get good grapefruits again after this spring...

just to let you know (late), but last sunday i tried this recipe...j & i neither really like arugula much b/c it is bitter ,but we thought the bitter- sweet combo of the leaves and fruit would be good...and yowza! it was super yummy. Thank you! we didn't have the champagne vinegar so i used red wine and we used shallots instead of red onions (better for my migraines)...really, really yummy and springy salad...also, during the part of seperating out the grapefruit from the membranes i got really juicy and messy and that was fun! I like messy recipes. if anyone reads this (even though by now it is an old post) I think 2 grapfruits would suffice we had a ton of left over grapefruit and i only used half the juice (they were whole foods grapefruits so they were big and juicy). highly recommend this recipe!
where do you find champagne vinegar? pregnancy has me craving lemony and grapefruity flavors
